Ginkgo Bioworks and Phytolon Achieve Milestone, Nearly Tripling Natural Food Color Production Efficiency

Ginkgo Bioworks announced on April 30, 2025, the successful completion of the second development milestone in its multi-product collaboration with Phytolon, a biotech-foodtech startup. This milestone focused on producing natural food colors via fermentation of baker's yeast.

Ginkgo leveraged its AI modeling expertise and high-throughput screening platform to deliver yeast strains with nearly 3-times higher production efficiency for 'Beetroot Red' and 'Prickly Pear Yellow' colors. This improvement significantly reduces production costs and carbon footprint for Phytolon.

Upon meeting this milestone, Ginkgo received additional equity in Phytolon, demonstrating the value generated from its partnerships. The enhanced production efficiency enables Phytolon to develop high-quality formulations for various food categories, addressing the growing demand for natural color alternatives.
